Sautéed Sausage, Peppers & Onions — A Quick, Flavor-Packed Skillet Meal

This simple skillet dish is one of those go-to meals that delivers big flavor with very little effort. It brings together sliced pre-cooked chicken or turkey sausage with soft, slightly sweet onions and vibrant bell peppers for a combination that’s both hearty and satisfying.
As everything cooks, the natural sweetness of the vegetables blends beautifully with the savory, slightly smoky flavor of the sausage. A mix of Italian herbs adds warmth and depth, while a splash of balsamic vinegar at the end ties it all together with a light tang that keeps the dish from feeling too heavy.
It’s the kind of recipe you can throw together on a busy weeknight without much planning, but it still feels like a complete, comforting meal.
To get started, slice your onions and bell peppers into thin strips. To save time, you can soften them in the microwave for a few minutes until they’re tender. This helps speed up the cooking process and ensures they cook evenly later in the pan.
While the vegetables are softening, slice your sausage into bite-sized pieces. Heat a nonstick skillet over medium heat and cook the sausage until it’s lightly browned and slightly crisp on the edges. Once done, remove it from the pan and set it aside.
In the same skillet, add a bit of olive oil and toss in the softened onions and peppers. Let them sauté over medium heat, stirring occasionally, until they begin to caramelize and develop a deeper, richer flavor.
Season the vegetables with oregano, basil, salt, and pepper as they cook. This is where the dish really starts to build its flavor.
Once the vegetables are nicely softened and slightly golden, add minced garlic and cook for about a minute, just until it becomes fragrant.
Return the sausage to the pan and mix everything together, letting the flavors combine.
To finish, drizzle in a splash of balsamic vinegar and stir well. Let everything cook for another couple of minutes so the sauce lightly coats the sausage and vegetables.
Serve it warm straight from the skillet, or pair it with toasted bread, hoagie rolls, or even over rice for a more filling option.
It’s simple, quick, and full of flavor—the kind of meal that feels effortless but still hits all the right notes.
