This Marinated Cucumber, Onion, and Tomato salad is a timeless summer favorite, delivering a refreshing and tangy flavor. Crunchy cucumbers, pungent onions, and ripe tomatoes are soaked in a simple but tasty vinaigrette, making it an ideal side for grilled dishes or a light, cooling meal by itself.

Ingredients:

Ingredient Quantity
Cucumbers, peeled and sliced 1/4 inch thick 3 medium
Onion, sliced and separated into rings 1 medium
Tomatoes, cut into wedges 3 medium
Vinegar 1/2 cup
Sugar 1/4 cup
Water 1 cup
Salt 2 teaspoons
Fresh coarse ground black pepper 1 teaspoon
Oil 1/4 cup
Fresh mint, chopped 1 teaspoon (optional)

Instructions:

  1. Combine Ingredients: Start by placing the peeled and sliced cucumbers, onion rings, and tomato wedges into a large bowl.
  2. Add Dressing: Pour in the vinegar, sugar, water, salt, freshly ground black pepper, and oil. If you like, stir in the chopped fresh mint as well.
  3. Toss & Marinate: Mix everything thoroughly to ensure the vegetables are well coated with the dressing.
  4. Chill: Cover the bowl and refrigerate for at least 2 hours to let the flavors blend and the vegetables soak up the marinade.
  5. Serve and enjoy this crisp, tangy Marinated Cucumber, Onion, and Tomato salad!
